Woodfired Raspberry Clafoutis
Woodfired Raspberry Clafoutis is a fantastic summer dessert to cook in the falling heat of your oven. Served hot with cool vanilla ice cream melting over the top, it’s a great way to end an alfresco evening with friends.
Woodfired Raspberry Clafoutis – Ingredients
400g fresh raspberries
Finely grated zest 1 orange
50g caster sugar
100g plain flour
3 free range eggs
300ml milk
300ml double cream
1tsp vanilla extract
A little soft butter

Dish for cooking the clafoutis – about 22cm wide and 4-5 cm deep
2 heat deflectors/fire guards
4-5 Mississippi with a good bed of embers
A few sticks of kindling
Woodfired Raspberry Clafoutis – Method
- Grease the dish all over with the softened butter.
- Put the raspberries in the base of the dish and scatter over the orange zest.
- Put the sugar and the flour in a bowl and crack in one of the eggs. Whisk the egg in and then do the same with the next 2 eggs to get a smooth paste.
- Stir in the milk, double cream and vanilla extract so you have a smooth batter.
- Pour the batter over the fruit in the dish.
- Push the embers to the sides of the oven and keep in place with the heat deflectors, one on each side.
- Put the bowl of batter on to the oven floor between the 2 beds of embers and shut the door.
- Let the clafoutis bake for 30-40 minutes until set with a slight wobble.
- If the top hasn’t browned enough, put a few more sticks of kindling on to the embers and set them on fire.
- Let the flames lick over the top of the oven to grill the pudding until it’s golden brown.
- Take the clafoutis out of the oven, dust with icing sugar and serve still hot with vanilla ice cream.

We use the same recipe to follow the different fruits through the summer – cherries, apricots, nectarines, peaches, blackcurrants, blackberries, plums…..truly a pud for all seasons!
