Using our purpose built wood-fired kitchen featuring two Bushman Ovens we run this hands-on class regularly throughout the year. The class is for anyone who has recently installed or is about to buy or build a wood-fired oven or for anyone who has had an oven for some time but feels they aren’t using it to its best.
We’ll use the traditional style oven (pictured left) and a second smaller oven to demonstrate the full versatility of wood-fired ovens and to give you as complete a picture as possible of how to get the best from your own oven and enjoy it fully. Wood fired ovens are perfect for pizza but can also do so much more. We’ll show you how to use them in many ways :
- Pizza – making dough, shaping, and baking
- Fish – scallops, roast fish
- Roast dinner – chicken, roast potatoes
- Steak – grilled rump steak with herb butter & blackened tomatoes
- Vegetarian – stuffed peppers, baba ghanoush.
- Flat breads – Pittas
- Pastry – Apple Tarte Tatin
We know from experience that using your oven to maximum effect takes a little getting used to and we’ll pass on lots of useful information such as:
- How the oven works
- Siting your oven and looking after it
- What wood to use
- Lighting and heating the fire
- Measuring and controlling temperatures
- Cooking utensils and other equipment
This course is for you if you are –

The class is always sociable, great fun and a combination of demonstration and hands-on learning. We cook a lot of different dishes during the day and naturally we have to try them all so you’ll be well fed!
Each course is limited to just 10 places. £195.00 per person. Lunch (lots of it) included. Starts 10:00am, ends around 4:30pm.

I bought the course for my husband, after he'd built a 'pizza oven' in the garden. The course was completely beyond our expectations! We knew we should be able to cook more than just pizzas but we came away with a world of possibilities!
The course ran from 10am-5pm, during which time David and Holly taught us everything; from how to start the fire and control the temperature, to making dough, and cooking (to perfection!) vegetables, pork belly, fish, scallops, calamari, pizzas, chicken, potatoes, bread and cake!
The course was so in depth, yet informal and enjoyable! We all got hand on experience and plenty of opportunities to ask specific questions. The best part, of course, was getting to taste everything we cooked! There really is nothing like the taste of wood fired cooking!

Thank you both for a wonderful weekend of Wood fired oven tuition and the opportunity to gorge on the produce, it was amazing, varied and plentiful. The next day I could not wait to light up my oven, I was out there at 07.00hrs and when the oven was up to temp. I did the Spatchcock chicken, potato wedges and a huge tray of roasted veg [with a little help from her indoors] Grrrrreat!!!! The following day we had some workman at the house which gave me the chance to improve my pizza skills, they loved them and did not stop talking about how much better they were cooked in a wood fired oven compared to what they would normally buy from their local pizza shop.
